Lucky me was invited to garden party over at some neighbors yesterday. The summer is the best time for gathering and enjoying the light Scandinavian summer nights, friends, drinks, good food, laughter and conversations.
As I’m a mother I really enjoy parties with room for children, teens, adults and people of all ages. I love the laughter, the playfulness and the laid back feel of garden/summer-parties.
Today I want to serve you some cool summer drinks suitable for party people of all ages.
Strawberry-rasberry-lime lemonade
Juice from 3 freshly squeezed limes
100-150 ml sugar
100-150 ml frozen raspberries
7 strawberries
500 ml water.
Add all the ingredients to a blender and mix well.
Pour the lemonade over in glasses with ice cubes.
Green Tea mojito
Juice from 3 freshly squeezed limes
150 ml green tea (cold)
10 fresh peppermint leaves
500 ml sprite or lemon soda
Add lime juice, peppermint leaves and cold green tea to a blender or old fashioned mortar. Mix well.
Add the lemon soda and just mix slightly with a spoon.
Pour the mojito drink in glasses with ice cubes. Top off with slices of lime and fresh peppermint leaves.
Rhubarb and raspberry soda with a hint of elderflower
2 rhubarb stalks in small pieces
100 ml sugar
150 ml water
200 ml raspberries
500 ml mineral water or soda water
Bring water, sugar, rhubarb to boil.
Let boil for about 5 minutes.
Add raspberries.
Mix well in a blender.
Add mineral water or soda
(To make a extra twist on this I’ve added 50 ml elderflower limonade for taste)
Pour in glasses with ice cubes.
