Just a tiny little recipe for you, my friends this weekend.
I’m in love with the berries and vegetables of this season and I’ll celebrate with a super colorful, fresh and yummy beetroot salad with blueberries.
Blueberry & beetroot salad
Serves 4 as a side dish
1,5 dl blueberries
1/2 polka beetroot (red& white)
1/2 red beetroot
1/2 yellow beetroot
2 carrots
2-3 spring onions
1/2 white cabbage
1 dl pecan nuts
1/2 lime
1-2 tbsp olive oil
Salt and pepper to taste
• finely cut or shred all the root vegetables and the cabbage.
• finely cut the spring onion
• Mix all the vegetables, blueberries and pecans in a bowl.
• add freshly squeezed juice from the lime along with olive oil, salt and pepper to taste and mix well.
