Happy Sunday!
Sundays are time for relaxing and recharging… in our household it’s family time, time for good food and just hanging around the house, being together doing things we love, feeling relaxed and comfy. In Norwegian we call it “koselig” or “kose seg “… same as danish “hygge”, wich I notice have been a hot, trendy word after it became clear the Danes (and Scandinavian people) are ranked to be the happiest people in the world … so obviously “hygge” or as we say “kose seg” must be a good thing …. 😂
Today our Sunday have been spent at home, we packed for departure tomorrow … grandma (mommo ) came by to try some dresses and we helped her pick the right one for the upcoming wedding. It was so much fun.
We had lunch and spent some time enjoying the wonderful summer weather.
Can’t think of anything more delicious when the sun is shining and the weather is warm than watermelon, so watermelon salad must be a perfect summer lunch.
This salad I’m about to share is made of herbs from the garden, celery stalks from the garden, a little bit of sugar snaps and ruccola salad. The only things not homegrown are the watermelon, the cucumber and the leek.
This salad goes perfectly with feta cheese – we prefer to have the cheese on the side, but you can totally blend it in with the other ingredients in the salad.
For this one we used
1/4 water melon chopped in small cubes
1/2 cucumber in small cubes
2 celery stalks in small pieces
1 cup ruccola
1 cup fresh herbs like basil, Thai basil, dill, oregano, cilantro, parsley or whatever you have on hand.
1/2 cup leek finely chopped
A handful of sugar snaps
Bring all together in a bowl
Drissle over some freshly squeezed lemon juice salt & pepper.
