We are having Some wonderful warm summer days here on the southern coast of Norway. We enjoy a few days off before the upcoming wedding on Saturday and today was perfect to chill at the beach.
We brought our sup (stand up paddle) board and had totally fun practicing and paddle. This is a wonderful and fun investment. It’s not for small children but for teens and adults this is a perfect “toy”. It’s also pretty sustainable (even if it’s made of rubber). It’s definitely nothing you throw away after one or two times use like any other floating plastic toy.. it has more than one use and it might be used for both stand up paddle (like it’s meant to) but also sitting, laying down, playing, floating, relaxing…
I tried sup first time last year and was hooked … loved it … and as a person that doesn’t necessarily are good at laying flat on the beach for hours this is a perfect activity.
This is not sponsored (lol) it’s just my idea of a good day at the beach.
Yes, and not to forget(!!) for the perfect hike or day at the beach you need to bring some perfect, delicious lunch that won’t melt or go bad even if it’s warm.
I looove to bring some yummy sandwiches. I prefer choosing things that are light and maybe a little bit salty like dried ham (prosciutto like “spekeskinke” or Serrano), salami (today I had fennel salami), egg and maybe some smoked salmon.
Here is how I make a few of my favourites.
1. slice the bread and add cream cheese. I used Philadelphia with herbs and garlic.
2. Add a bunch of salad and herbs (from the garden) to half of the sandwiches.
3. Add ham, salami, sliced egg or whatever you prefer.
I even added some sliced strawberries to a few of my sandwiches. This was super yummy and refreshing.
4. Now you can add slices of avocado, cucumber or fresh herbs to your sandwiches.
5. Add the slices of bread with cream cheese on top of the other sandwiches. Cut the sandwiches in half and stack them into a box.
If I serve the lunch at home I like open face sandwiches the best … something like this:
Sandwiches are easy to make and affordable. You can use whatever spread you have in your pantry and you can make it as fancy as you prefer.
For some reason the girls and I have been more and more fan of adding fruits to our sandwiches – it’s perfect on warm summer days.
Next time I think I’ll try some cream cheese and peach sandwiches.
