I've also been thinking about all my friends that are intolerant to gluten ... how to make tasty, gluten-free Christmas cookies? So I'm trying out some different types of gluten free cookies as well this year. The thumb print cookies I've made here are made with grounded hazelnuts and gluten-free flour or almond flour. You can of course use plain white wheat flour if you prefer too (but then they're not gluten free) These cookies are easily made and are crispy and tasty with a soft, yummy middle.
