Personally I’m enjoying some lazy, relaxing days, knitting, eating good food, being with the people I love, sharing love and of course making food together with and for my family.
We’ve enjoyed making some new veggie dishes and tried out some new stuff.
Today I want to share our much loved vegetable tart with crisp pastry and tasty vegetable filling.
These are perfect for lunch, as part of a buffet or veggie tapas meal.
If you use pre made butter dough these are really fast and easy to make. You can store them in the fridge and bring in your lunch box too.
Veggie pop tart
500 grams pre made butter dough
1 tbsp oil for frying
2 dl cooked rice
1 carrot- shredded
100 g canned red beans
1,5 dl finely chopped broccoli
1 onion – finely chopped
2 dl fresh spinach finely chopped
1/4 squash finely chopped
2 tbsps green pesto
1 teaspoon dried oregano
1/2 teaspoon garlic powder
Salt and pepper to taste
•preheat oven to 200 degrees Celsius
•add oil to a fraying pan, heat the pan and add vegetables and rice. Let cook 2-3 minutes.
•Add pesto, herbs, garlic, salt and pepper and stir well. Take the frying pan off the heat.
•roll the butter dough with a rolling pin until 2,5 mm think
•use a cupcake mold, grease well or cover with cupcake paper.
•Cut the dough into 14×14 cm squares and lay the squares in the cupcake molds.
• add a spoonful of the rice-vegetable mixture to each dough covered mold.
•gather the four corners of the dough on the top of every tart.
•brush with a little bit of egg whites and sprinkle with sesame seeds
•bake in oven on 200 degrees for aprx 15 minutes.
•serve warm with salad or with other vegetable dishes.
Veggie butterdeigsterte
500 g ferdiglagd butterdeig.
1 ss olje
2 dl kokt ris
1 gulrot – revet
1/4 squash, finhakket
1,5 dl brokkoli – finkuttet
100 g hermetiske, røde bønner
2 dl finhakket, frisk spinat.
1 løk – finhakket
2 ss grønn pesto
1 ts tørket oregano
1/4 ts hvitløkspulver
Salt og pepper
(Egg og sesamfrø til Topping)
•forvarm ovnen til 200 grader
•ha olje i en stekepanne og sett pannen på middels høy varme.
•ha grønnsaker og ris i panna og stek et par minutter.
•ha i pesto, oregano, hvitløk, salt og pepper og bland godt.
• rull ut butterdeigen til ca 2,5mm tykkelse.
•bruk muffinsformer og smør dem godt eller kle med muffins-papir.
•kutt deigen i ca 14×14 cm og legg den i muffinsformene.
•fyll hver muffinsform med en stor skje grønnsaksfyll.
•klem sammen de fire deig-hjørnene på toppen av hver terte.
•pensle testene med litt egg og dryss over sesamfrø.
•stek tertene på 200 grader i ca 15 minutter.
•serveres varme med salat eller sammen med andre grønnsakretter.
